This is a special two stage fermentation Pink Bourbon.⁣Whole cherries are first washed, followed by the first phase of fermentation - whole cherry aerobic fermentation. After 42 hours, whole cherries undergo a second phase as anaerobic fermentation. After 72 hours in second phase, cherries are pulped, and control dried for 26 hours.⁣
